COLUMBIA — Raydell Wright, 44, has been cooking breakfast at the Broadway Diner, 22 S. Fourth St. in Columbia, for slightly more than a year. As the only cook on duty, he serves up pancakes and omelets with a lot of love. His favorite dish to make is Broadway’s famous dish “The Stretch” — chili and onions piled on a bed of eggs and hash browns. Wright’s home-cooking is available from 5 a.m. to 2 p.m. during the week.
What do you recommend to new customers?
The Stretch, just the regular Stretch.

Very good.
Tell us something most people don’t know about cooking.
In order to get a good product, you have to have the right temperature and cook for the right amount of time.
Any kitchen secrets?
Keep it clean. I always stay on top of the cleaning, even when it gets busy.
If you could change anything on the menu, what would it be?
Waffles. We have pancakes but no waffles.
What’s the strangest order you’ve made?
Someone ordered pancakes with peanut butter and a medium over-easy egg on top, cut into squares.
It was weird, and it came when we were really busy. But it’s no problem. We do it. We have to satisfy the customer.
If you could cook for any three people, who would they be?
My mom and my grandfather. No famous people. They already get special treats.
What’s your favorite place in Columbia?
Stephens Lake Park. I go there at least three or four times a week for relaxation, the atmosphere.
